Ginger Peach Salsa
Peaches are an essential part of summer in the Okanagan. This Ginger Peach Salsa is perfect for grilling, also an essential part of summer!
3 medium peaches, peeled and diced
1/2 cup diced red onion
1 thumb sized knob of fresh ginger, grated
zest and juice of one lime
2 tbsp chopped fresh cilantro or flat leaved parsley
2 green jalapeno peppers, seeded and finely diced
salt and black pepper, to taste.
Put all ingredients in a bowl and gently combine
Refrigerate for an hour or more before using
Serve on grilled salmon, chicken, or pork. This is also excellent on grilled Portobello mushrooms, chicken, or turkey burgers, and as a taco topper.
