    Butternut Squash Soup

    Leah Campbell - Davison Farm Orchards

    If there's one soup that's a staple during the colder months, it's butternut squash. Leah Campbell from Davison Farm Orchards shares her go-to recipe with us!

     

     

    Prep Time: 15 minutes

    Cook Time: 4-8 hours in a crock pot

    Servings: 20-25 cups of soup

     

    Ingredients:

    • 1 medium butternut squash

    • 1 large onion

    • 3 large carrots

    • 1 TSPB butter

    • 4 cups of chicken broth

    • 1 TSP salt

    • 2 TSP dried thyme

    • milk or cream to thin

    • fresh parmesan to garnish

     

    Instructions:

    1. Peel and chop the squash into approximately 1 inch thick pieces and add to the crock pot

    2. Peel and chop the carrots and onion

    3. Saute the carrots and onion in the butter until fragrant and beginning to brown

    4. Add the sauted onions and carrots, chicken broth, salt and thyme to the crock pot

    5. Cover and cook for 4-8 hours

    6. Use an immersion blender to blend until smooth

    7. Add milk or cream to thin to your desired consistency

    8. Serve with Parmesan cheese to garnish
