Strawberry Spinach Spring Rolls

These strawberry spinach spring rolls are a healthy 6-ingredient snack or appetizer recipe that is ready in only 10 minutes. All the flavors of strawberry spinach salad in spring roll form!

Prep Time: 10 mins

INGREDIENTS:

  • 3 cups loosely packed spinach

  • 1 cup strawberries, sliced

  • 1/3 cup feta cheese, crumbled

  • 1/3 cup pecans, chopped

  • 8 spring roll wrappers

  • Balsamic reduction

DIRECTIONS:

  1. Fill a large bowl with warm water.

  2. Place spring roll wrapper in the water, keeping it immersed for 10-15 seconds, until wrapper becomes slightly soft. (It will still have some structure to it and not be completely soft yet).

  3. Place on a clean dry surface.

  4. Add 1/3 cup loosely packed spinach, followed by 2 tbls strawberries, 2 tsps of pecans and 2 tsps of feta cheese.

  5. Fold the top, then the sides, then roll up as tightly as you can manage.

  6. Set aside and repeat with remaining spring rolls.

  7. Drizzle with balsamic reduction before eating.
