Get a kick start to your day with this perfect vegetarian breakfast!
Servings: 2 - 3
1 pkg. Tofu Extra Firm, drained and well pressed
1 medium onion, chopped
1 cup mushrooms, sliced
½ medium red bell pepper, cored, seeded and chopped
2 cloves garlic, minced
½ tsp. turmeric (start with ½ tsp, add more depending on color and taste)
½ tsp. ground ginger
1 tbsp. olive oil
Salt and pepper to taste
Garnish with cilantro
Heat olive oil in pan over high heat and sauté onion until translucent.
Add bell pepper, mushrooms and garlic and cook through.
Crumble tofu into pan and add spices. Stir well to combine and heat through.
Garnish with cilantro and serve hot.
